Waffles and Wafers

Take four eggs & beat them very well, then take a good spoonful of a pint a pint of fine sugar, one nutmeg grated, cream & a pound of flour, a pound of butter melted, two or three spoonful’s of yeast, mix well together and bake them in your wafer tongs on the fire. For the sauce take grated cinnamon, sack & melted butter, sweeten to your taste. The first recorded recipe for wafers from Mary Ketelby’s  A Collection of Above Three Hundred Receipts in Cookery London 1724.

By the 1880’s Queen Victoria’s Chef de Cuisine Charles Francatelli was serving her majesty with the curiously named desert Iced Pudding a la Chesterfield an elaborate tower of wafers & waffles with Chantilly cream & mixed sweets & ice cream.

Fast forward another 120 years & Opalbond has developed a range of functional wafers & waffles, Low Sugar, Gluten Free, Low Sugar + Protein, Low Sugar + Protein with a chocolate coating, We’ve also managed to substitute Mary Ketelby’s primary ingredient & develop vegan waffles & wafers.
